The present invention relates to a method for producing melon ice flakes with syrup and more specifically, to a method for producing melon ice flakes with syrup which includes a step (1) of exposing internal melon flesh while removing the stalk end of the melon by cutting the top of the melon; a step (2) of forming an empty space inside the melon while removing the exposed flesh of the melon; a step (3) of inputting ice flakes into the empty space; a step (4) of adding milk and evaporated milk; a step (5) of putting the separated fresh of the melon on the ice flakes; a step (6) of putting ice flakes on the melon flesh on the ice flakes; a step (7) of flattening the surface of the ice flakes; and a step (8) of putting ice cream on the flattened ice flakes. The method for producing melon ice flakes with syrup of the present invention produces ice flakes with syrup by forming an empty space via the removal of melon flesh while maintaining the shape of the melon; and adding ice flakes, milk, evaporated milk, melon flesh, ice cream, and nuts into the formed empty space, thereby producing ice flakes with syrup which has a sweet taste without sweetening materials by using a melon and evaporated milk only and which is helpful to human bodies.
