PROBLEM TO BE SOLVED: To provide a manufacturing method of a processed product of garlic with outer skin on, which allows garlic ingredients to be ingested in various forms corresponding to the preference, health conditions, and age of an ingesting person and permits active ingredients contained in conventionally discarded outer skin to be ingested together with garlic ingredients.SOLUTION: A raw garlic enveloped with outer skin on is directly fermented and matured to produce a black garlic with outer skin on. The produced black garlic with outer skin on is vacuum dried in a frozen state, which is directly processed into powder so as to produce a processed powder product of black garlic. The produced processed powder product of black garlic is fed into a predetermined amount of water or liquid food material so as to be kneaded, which is filtered after a certain period of time to produce a black garlic ingredient-containing liquid food material. Alternatively, a predetermined amount of water or liquid food material is added to the produced processed powder product of black garlic so as to be kneaded to produce the black garlic ingredient-containing liquid food material. Further alternatively, the produced processed powder product of black garlic is solidified to produce a black garlic ingredient-containing solidified food material.COPYRIGHT: (C)2014,JPO&INPIT【課題】摂取者の好み、健康状態、年齢等に応じて、様々な形態でニンニク成分を摂取でき、また、これまで廃棄していた外皮に含まれる有効成分をニンニク成分と一緒に摂取することのできる、外皮付きニンニク加工品の製造方法を提供する。【解決手段】外皮に包まれた生ニンニクを外皮ごと発酵および熟成させて外皮付きの黒ニンニクを得ると共に、得られた外皮付きの黒ニンニクを凍結状態で真空乾燥させて外皮ごと粉末加工し、黒ニンニク粉末加工品を得る。得られた黒ニンニク粉末加工品を所定量の水または液状食材に投入して混練し、一定時間経過後にろ過し、黒ニンニク成分入り液状食材を生成するか、得られた黒ニンニク粉末加工品に所定量の水または液状食材を加えて混練し、黒ニンニク成分入り練り状食材を生成するか、得られた黒ニンニク粉末加工品を固形化し、黒ニンニク成分入り固形化食材を生成する。【選択図】図2
