The subject matter of the invention is a method for producing capsules with a hydrophilic core and a polymer shell, comprising a stage where composite, three-layered droplets are dropped into a solution, whereby the external layer is produced using an aqueous polymer solution, the intermediate layer is an oil layer, and the droplet core is hydrophilic, characterised in that the said three-layered droplets are formed by pumping fluids through a nozzle containing four coaxially aligned tubes, whereby water, aqueous solution or aqueous suspension are pumped through the most internal tube A, oil or oil solution are pumped through the subsequent tube B, aqueous polymer solution is pumped through the next tube C, and the fluid controlling the formation of the said three-layered droplets is pumped through the most external tube D. The aqueous solution and the oil solution may contain flavour compounds.
