The present invention relates to a process for providing a fraction enriched in polyphenols from a starting material comprising the steps of: (i) dissolving the starting material in an aqueous solvent； (ii) dissolving the starting material in a pH below 3, , (Iii) bringing the starting material into contact with the chromatographic resin, (iv) desorbing the polyphenols from the chromatographic resin to provide an eluate containing the polyphenols； and (V) adjusting the pH of the eluate above pH 3.5 (preferably pH 4)； (vi) separating the eluate from the eluted polyphenols to obtain an enriched fraction of polyphenols； including.
