Disclosed is a yeast autolysate, having a dry solids ratio of between 50 percent and 95 percent and comprising at least 0.75 percent w/w 5'-GMP based on sodium chloride free dry matter of the yeast autolysate and whereby the "dry solids ratio" is defined as the ratio between solubilised solids and total solids of the yeast autolysate. Also disclosed is a process for preparing the yeast autolysate comprising subjecting yeast to autolysis at pH 4-7 and at a temperature in the range of 30-70 degrees C in the presence of an endogenous protease of the yeast; and further enzymatic treatment to produce 5'-ribonucleotides and concentrating the complete reaction mixture to yield the yeast autolysate.
