One purpose of the present invention is to provide a polymeric glucan having both a low digestion rate and high digestibility. A polymeric glucan that has a low digestion rate, contains almost no indigestible ingredients, and is capable of achieving both a low digestion rate and high digestibility is produced by reacting (1) a specific concentration of a branching enzyme with (2) 4-α-glucanotransferase and/or an exo-type amylase using a branched glucan as a substrate.Un objet de la présente invention est de pourvoir à un polymère de type glucane ayant à la fois une basse vitesse de digestion et une digestibilité élevée.
