PROBLEM TO BE SOLVED: To provide a production method of rice gel capable of obtaining rice gel by a simple process, and excellent in maintainability of a raw material before being changed into the rice gel and to provide a production method of gluten-free rice power bread.SOLUTION: In a production method of rice gel, rice powder is subjected to heat treatment under a reduction atmosphere and then to maceration, to thereby obtain a gel state, or otherwise, rice is subjected to heat treatment under a reduction atmosphere and changed into a powdery state, and then subjected to maceration, to thereby obtain a gel state. In a production method of a raw material for rice gel, the reduction atmosphere is obtained by supplying super heated steam into a heater for performing the heat treatment.
