The present invention relates to compositions comprising octenyl-succinic anhydride- modified gum acacia and carotenoids. It has been found that the compositions according to the invention allow to produce emulsions having a very high color intensity, and color stability with a low turbidity. These compositions can be used for the enrichment, fortification and/or coloration of food beverages, animal feed, cosmetics or pharmaceutical compositions. The present invention furthermore refers to a process for the manufacture of a beverage by mixing the compositions with ingredients of beverages. The present invention also refers to beverages obtainable by this process.La présente invention concerne des compositions comprenant de la gomme arabique modifiée par de l'anhydride octénylsuccinique et des caroténoïdes. On a trouvé que les compositions selon l'invention permettent d'obtenir des émulsions présentant une très forte intensité de couleur, et une stabilité des couleurs avec une faible turbidité. Ces compositions peuvent servir à enrichir, fortifier et/ou colorer les boissons, les aliments pour animaux, les cosmétiques ou les compositions pharmaceutiques. La présente invention concerne en outre un procédé pour la fabrication d'une boisson, par le mélange des compositions avec des ingrédients de boissons. La présente invention concerne également des boissons que l'on peut obtenir par ce procédé.
