PROBLEM TO BE SOLVED: To provide a method for increasing GABA content in a melon plant that sucks water content through a root and a stem from underground to a fruit and a leaf, wherein flow of water content is cut off on a normal harvest date of a fruit, in this state the fruit is left for a proper period of time, and then the fruit is harvested from the melon.SOLUTION: Water content of the fruit flows into a leaf for transpiration, so that essence component of the fruit is thickened. GABA content in 100 mL of the melon juice is increased by approximately 4.3 times as much as that of a conventionally harvested one. The GABA content of the harvested melon can be increased by use of an easy method without time and effort. Even a melon that cannot be sold as a high quality melon because of imperfections or being ill-shaped can be available for GABA content extraction.
