Disclosed are an apparatus for manufacturing jujube chip and a method thereof. The apparatus for manufacturing jujube chip comprises: a classification unit classifying input jujube according to each size； a seed removing unit, if the classified jujube is input, arranging the classified jujube in a row and penetrating through the arranged jujube to remove seeds； a fine cutting unit, finely cutting the jujube, from which the seeds are removed, if the jujube is input； a tray feeding unit putting the finely cut jujube on a tray and feeding the tray if the jujube put on the tray satisfies a preset condition； and a drying unit, drying the jujube put on the tray if the tray is fed and inserted therein.
