PROBLEM TO BE SOLVED: To improve a xanthane gum to improve thickening properties, gelling properties, emulsion/dispersion stability, water retention, refrigeration resistance and texture of a composition containing the modified xanthane gum.SOLUTION: The method for modifying the xanthane gum uses the xanthane gum having &le1% acetyl group content. Preferably, the modification is carried out by heat treatment in a powder state at 50-150°C for 1-360 min. More preferably, the heat treatment is carried out under a reduced pressure in &le40% relative humidity.
