PROBLEM TO BE SOLVED: To provide a formed octopus for octopus dumplings having new palate feeling, which is obtained by using, without waste, a corner cut-off part of an octopus disposed hitherto as waste, after cutting out an octopus used for octopus dumplings, and which is fitted to softness of a dough peculiar to octopus dumplings； and to provide a production method of octopus dumplings using the same.SOLUTION: A formed octopus for octopus dumplings is produced by binding small pieces of an octopus by using a binding material, and by using an alginic acid-containing formulation as the binding material.SELECTED DRAWING: None【課題】たこ焼きに使用するタコを切り出した後の、廃棄物として処分していたタコの切り落とし部分を無駄なく使用して、しかも、たこ焼き特有の生地の軟らかさに適合させた、新食感のたこ焼き用成形タコ及びこれを用いたたこ焼きの製造方法を提供する。【解決手段】、たこ焼き用成形タコは、タコの小片を結着物を用いて結着し、前記結着物として、アルギン酸含有製剤を用いて製造する。【選択図】なし
