PROBLEM TO BE SOLVED: To provide a cooking method and a guard that can suppress dirt of cookware caused by cooking.SOLUTION: A guard 1 is disposed in an oil tank 4 of a pressure fryer filled with frying oil 5. The guard 1 includes a stainless-steel pressing member and a box-shaped nonwoven fabric capable of storing the pressing member. Meshes of a predetermined size are formed in the nonwoven fabric. The size of the meshes is the size that passes liquid materials such as moisture or oil, but does not pass solids such as scum or fat. While heating the frying oil 5 with a heater 7, the fried food cooking of poultry 6 is performed in a space disposed of the pressing member, i.e., in the space surrounded by the surface opposite to the surface facing an inner wall of the pressure fryer oil tank 4 of the nonwoven fabric.SELECTED DRAWING: Figure 3
