PURPOSE: A method for producing lactulose is provided to improve economic efficiency of a process, to recycle resources by utilizing a lactose-containing waste liquid, and to produce prebiotics. CONSTITUTION: A method for producing lactulose comprises the steps of: immobilizing beta-galactosidase on a carrier； filling the immobilized carrier in a packed bed reactor； and injecting a substrate containing whey and fructose to the packed bed reactor and inducing a reaction. A system for producing lactulose comprises: the packed bed reactor (11) filled with carrier-immobilized beta-galactosidase； a substrate injection unit for injecting the substrate containing whey and fructose into the packed bed reactor； and a temperature control unit which controls reaction temperature of the packed bed reactor.본 발명은 락툴로오스 생산 방법 및 락툴로오스 생산 시스템에 관한 것으로, 구체적으로는 유청 및 과당을 포함하는 기질을 락툴로오스로 전환시키는 담체에 고정된 베타-갈락토시다제를 포함하는 충진상 반응기를 이용하여 락툴로오스를 생산하는 방법을 통하여, 기질로 고가의 정제된 유당 대신에 저가의 유청을 이용하여 공정 비용을 감소시키고, 유청의 재활용이 가능한 락툴로오스 생산 방법 및 락툴로오스 생산 시스템에 관한 것이다.
