PROBLEM TO BE SOLVED: To provide a solution affinity polysaccharide, a high viscosity xanthan gum, a high water absorbable xanthan gum, a soluble locust bean gum, and a soluble pectin whose affinity to an aqueous solution, such as an aqueous salt solution is improved.SOLUTION: The solution affinity polysaccharide contains 5 wt.% of an aqueous salt solution, 3.5 w/v% of a water-soluble protein, and 3.3 w/v% of oil and fat whose affinity of the raw material polysaccharide to either aqueous solution to be improved.
