PROBLEM TO BE SOLVED: To provide a method for producing polysaccharides, by which the polysaccharides can simply be extracted in a few processes at a lowered viscosity as much as possible to improve workability.SOLUTION: This method for producing the polysaccharides comprises extracting a raw material in which the polysaccharides are wholly distributed, such as Corchorus olitorius, Basella rubra, Abelmoschus esculentus Moench, or Dioscorea batatas, with a 40 to 80 %W/V ammonium sulfate aqueous solution. The obtained polysaccharides can re-extracted and then subjected to a desalting treatment to fractionate the polysaccharides.COPYRIGHT: (C)2007,JPO&INPIT【課題】 多糖類の抽出をできるだけ簡単に、かつ少ない工程で達成すること、加えて粘度を下げることにより作業性を向上させられる方法等を提供すること。【解決手段】 モロヘイヤ、ツルムラサキ、オクラ、伊勢いも等のように、多糖類が全体に分布している原料について、40%W/V~80%W/Vの硫安水溶液を用いることにより、上記課題を解決する多糖類の抽出方法が提供される。この方法で得られた多糖類は、水で再抽出し、脱塩処理することにより、分画することができる。【選択図】 図4
