The present invention relates to a method for preparing powdered red pepper paste and powdered red pepper paste prepared thereby and, more specifically, to a method for preparing powdered red pepper paste having stability and extended expiration date and powdered red pepper paste prepared thereby. The present invention increase solubility at the same time and extends expiration date, because a water content of powdered red pepper paste lowers to 1 to 2% through drying red peppers using far infrared light instead of a general vacuum freeze-drying method. In addition, the present invention increases the solubility which is a disadvantage of the existing powdered red pepper paste due to generate a porosity by mixing bubbles when stirring.본 발명은 분말형 고추장의 제조방법 및 제조된 고추장에 관한 것으로, 더욱 상세하게는 복원성이 좋고 유통기한이 연장된 분말형 고추장의 제조방법 및 제조된 고추장에 관한 것이다.본 발명의 목적을 달성하기 위하여, 본 발명은 일반적인 진공냉동 건조의 방법이 아닌, 원적외선을 이용하여 건조를 시킴으로서, 분말 고추장의 함수량을 1-2%로 낮추어 물이나 액상 첨가시 용해도를 높히는 동시에, 유통기한을 연장하도록 하였고, 교반시 기포를 혼합하여 기공을 생성케 하여, 기존 분말 고추장의 단점이었던 용해도를 높히는 것을 특징으로 한다.
