The present invention relates to a method for producing colloidosomemicrocapsules from microcapsules of solidparticles, obtained by ionic gelation. In the method, an O/W emulsionstabilised with the microcapsules of solid particles is initiallyproduced, then the particles are fixed to an interface by means ofpolyelectrolyte adsorption, crosslinking, thermal treatment, orel treatment with a fatty coating, thereby producing the colloidosome, withthe water-insoluble phase being encapsulated in the coreand coated by the particles of the shell.
