PROBLEM TO BE SOLVED: To provide a manufacturing method of frozen heated foods for extending a storage possible time of heated foods, and a sterilization method of the frozen heated foods.SOLUTION: There are provided a manufacturing method of a frozen heated foods, including an exposure process for exposing the frozen heated foods to an over heated steam with a temperature at a discharge port of the over heated steam of over 250 to 880°C, and a sterilization method. There is provided the method, in which exposure is conducted for 0.01 to less than 3 sec., preferably 0.01 to less than 1 sec. to an area of 1 mm2 of a surface of the frozen heated foods in the exposing process. There is provided a sterilization method in which a distance from a surface to the discharge port of the frozen heated foods is 1 to 20 mm, and the frozen heated foods are exposed to overheated steam supplied at 20 (kg/time (hr)).EFFECT: Effective sterilization of the heated foods can be achieved even when manufactured heated foods are frozen without sealing the same in a packaging container.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2019,JPO&INPIT【課題】加熱済食品の保存可能期間を長くする、冷凍された加熱済食品の製造方法、冷凍された加熱済食品の殺菌方法の提供。【解決手段】過熱蒸気の吐出口における温度が250超~880℃の該過熱蒸気に、冷凍された加熱済食品を曝露する曝露工程を含む、冷凍された加熱済食品の製造方法、及び殺菌方法。前記曝露工程において、前記冷凍された加熱済食品の表面の1mm2の領域に対して、0.01~3秒未満、好ましくは0.01~1秒未満曝露する、前記方法。曝露工程において、冷凍された加熱済食品の表面から吐出口までの距離が1~20mmであって、かつ20(kg/時間(hr))以上供給される過熱蒸気に、前記冷凍された加熱済食品を曝露する、殺菌方法、方法。【効果】一旦製造した加熱済食品を包装容器内に密封することなく冷凍した場合であっても、該加熱済食品の十分な殺菌を実現し得る。【選択図】図1
