The present invention comprises of an antioxidative film using swim bladder gelatin and fucoidan, whereby a sulfated polysaccharide of brown seaweed is developed. Gelatin is extracted from the swim bladder of rohu (Labeo rohita) giving a yield of 7%. Fucoidan is extracted from brown seaweed with a yield of 6.83% which possesses a good DPPH radical scavenging activity of 89% at 10 mg / ml concentration. Gelatin-fucoidan films are formed with varying concentration of fucoidan using sorbitol as plasticizer. The optimized condition for the film formation is found to be 3% gelatin, 0.9% sorbitol and 0.3% fucoidan, as it possessed the maximum DPPH radical scavenging activity. The developed antioxidative film using gelatin-fucoidan shall therefore find application in food industry as a lipid oxidation preventive barrier edible film.
