Vorgeschlagen werden flüssige Aromastoffgemische, enthaltend(a) 10 bis 25 Gew.-% öllösliche Aromaemulsionen oder Aromakonzentrate,(b) 15 bis 25 Gew.% anorganische Salze,(c) 6 bis 12 Gew.-% wasserlösliche Bestandteile,(d) 2 bis 10 Gew.-% wasserunlösliche Bestandteile und Farbstoffe,(e) 0,1 bis 6 Gew.-% Hydrokolloide und Emulgatoren sowie(f) ad 100 Gew.-% Wasser,mit der Maßgabe, dass die Aromaemulsionen, die die Komponente (a) bilden, ihrerseits(a1) 0,1 bis 40 Gew.-% öllösliche Aromastoffe,(a2) 5 bis 20 Gew.-% Stabilisatoren,(a3) 0 bis 1 Gew.-% Konservierungsmittel sowie(a4) ad 100 Gew.-% Wasseraufweisen.Liquid flavor composition comprises: (a) 10-25 wt.% oil-soluble aroma emulsions or aroma concentrates, (b) 15-25 wt.% inorganic salts, (c) 6-12 wt.% water-soluble constituents, (d) 2-10 wt.% water-insoluble constituents and dyes, (e) 0.1-6 wt.% hydrocolloids and emulsifiers, and (f) water which is made up to 100 wt.%, where the aroma emulsions forming component (a) comprises (a1) 0.1-40 wt.% oil-soluble aromatic compounds, (a2) 5-20 wt.% stabilizers, (a3) 0-1 wt.% preservatives and (a4) water which is made up to 100 wt.%. Independent claims are also included for: (1) producing liquid flavor composition, comprising (i) producing a first aqueous aroma emulsion by processing the components (a1), (a2) and (a3) and applying strong shearing forces to obtain a homogeneous emulsion, and (ii) processing (a), (b), (c), (d) and (e) by applying strong shearing forces to obtain a homogeneous dispersion (2) loading foods with flavor compositions, in which the liquid compositions are sprayed on the foods and (3) foods which are loaded with composition.
