The present invention relates to a composition for preventing the formation of a biofilm of microorganisms containing an enzyme-treated extract obtained from a licorice extract as an active ingredient. More specifically, the present invention relates to a method for producing a licorice extract, in which a solvent extract of licorice is treated by an enzyme； and a composition for preventing the formation of a biofilm of a pathogenetic strain containing an enzyme-treated licorice extract produced through the method. According to a composition containing an enzyme-treated licorice extract of the present invention, the growth of Streptococcus mutans, Xanthomonas oryzae, or Yersinia enterocolitica is intactly maintained, and the formation of a biofilm is controlled, so the composition has effects in preventing and treating diseases of the oral cavity such as dental caries and paradentitis, controlling rice plant blight, and preventing and treating enteritis.본 발명은 감초 추출물을 효소처리한 추출물을 유효성분으로 함유하는 미생물의 바이오필름 형성 방지용 조성물에 관한 것으로, 더욱 자세하게는 감초의 용매추출물을 효소로 처리하는 것을 특징으로 하는 감초 추출물의 제조방법 및 상기 방법으로 제조된 효소처리된 감초 추출물을 함유하는 병원성 균주의 바이오필름 형성 방지용 조성물에 관한 것이다.본 발명에 따른 효소처리된 감초 추출물을 함유하는 조성물은 스트렙토코커스 뮤탄스(Streptococcus mutans), 잔토모나스 오리재(Xanthomonas oryzae)또는 예르시니아 엔테로콜리티카(Yersinia enterocolitica)의 성장은 그대로 유지하면서 바이오필름의 형성을 억제하여 우식증, 치주염과 같은 구강 질환의 예방 및 치료와 벼의 흰잎마른병의 방제 및 장염의 예방 및 치료에 효과적이다.
