A process for recovering phenolic compounds from waste from the berry-processing industry, wherein the waste from the berry-processing industry is subjected to the following steps: mixing the waste form the berry-processing industry with a 1/1 to 1/3 by volumetric ratio alcohol/water mixture in a 1/20 to 1/5 weight/volume ratio macerating the solid/liquid mixture for 3 to 24 hours at a temperature from 40 to 60°C, with stirring separating through filtration the extract comprising the solubilized phenolic compounds.La présente invention concerne un procédé de récupération de composés phénoliques à partir de déchets provenant de lindustrie de transformation des baies, les déchets de lindustrie de transformation des baies étant soumis aux étapes suivantes : mélange des déchets de lindustrie de transformation des baies en un rapport volumétrique de 1/1 à 1/1, mélange alcool/eau en un rapport de 1/20 à 1/5 poids/volume macération du mélange solide/liquide pendant 3 à 24 heures à une température de 40 à 60°C, sous agitation, séparation par filtration de lextrait comprenant les composés phénoliques solubilisés.
