Dry powder mixture comprises: at least one sugar; an expanding agent; at least one stabilizing agent; and food acid, where the mixture is able to be mixed in fruits or fruit based preparations and the ratio of stabilizing agent/expanding agent is greater than 10, the sugar/agent is greater than 100 and total sugars/stabilizing agent is greater than 100. Independent claims are included for: (1) preparing a fruit sorbet or ice cream comprising: adding dry powder mixture to fruit or a fruit based preparation; placing the mixture mixed in pre-cooled ice machine before cooled, where the cooling system is a cold ice pack; churning for 5-60 minutes according to ice machine; and packaging and freezing; and (2) fruit sorbet or ice cream prepared in ice machine from fruit or fruit based preparation and dry powder mixture by spooning with a hardness of 40-65N, whipping of 20-90% and a non-spangled smooth texture.
