PROBLEM TO BE SOLVED: To provide a dried fish with strong fleshy scent which has fleshy scent more than that of a dried fish manufactured by a conventional process at least, stably, simply, and industrially.SOLUTION: At least 45 ppb of furaneol and at least 30 ppb of methional are made to be included in 3% of a soup stock of a dried fish. In the method, heating at high temperature using hot air or far-infrared rays is performed after a boiling/ripening process, after a smoking attachment process, and before a drying process.
