PROBLEM TO BE SOLVED: To produce the fine crystals of a solid fat, especially the fat and oil originated from palm oil or cocoa butter whose crystals are liable to be coarsened, or the like, by a simple method.
SOLUTION: There are provided the method for depositing the fine crystals of the fat or oil, comprising adding behenic acid to the fat and oil in the form of the free fatty acid preferably in an amount of &ge0.01 wt.%, whereby the deposition of the fine crystals of the fat and oil can effectively be promoted, and an agent for promoting the deposition of the fine crystals of the fat and oil, containing the behenic acid as an active ingredient.
