The preparation method of hulless barley product of the present invention is characterized in short time, high efficiency, good stability and low energy consumption. The hulless barley product prepared by the method has anthocyanin content higher than 50%, and contains various kinds of anthocyanins. According to the analysis, the anthocyanins include cyanidin-3-glucoside, cyanidin 3-0-(3"-0-malonyl-glucoside), cyanidin 3-0-(6"-O-malonyl-glucoside), cyanidin 3-0-dimalonylglucoside, pelargonidin 3-0-dimalonylglucoside and paeonidin 3-0-dimalonylglucoside.
