#$%^&*AU2020101915A420200924.pdf#####ABSTRACT The present invention discloses a preparation method of hulless barley product rich in anthocyanins, comprising the following steps: take the hulless barley and crush it, add the acid-containing alcoholic solution for ultrasonic extraction, filter the extracting solution by ceramic membrane to remove the impurities, and perform the freeze drying of the filtrate to obtain the hulless barley product. The preparation method of hulless barley product of the present invention is characterized in short time, high efficiency, good stability and low energy consumption. The hulless barley product prepared by the method has anthocyanin content higher than 50%, and contains various kinds of anthocyanins. According to the analysis, the anthocyanins include cyanidin-3-glucoside, cyanidin 3-0-(3"-0-malonyl-glucoside), cyanidin 3-0-(6"-O-malonyl-glucoside), cyanidin 3-0-dimalonylglucoside, pelargonidin 3-0-dimalonylglucoside and paeonidin 3-0-dimalonylglucoside.
