Emulsion comprises water, 1-50 wt.% a lipid phase, 1-10 wt.% saponins, 5-40 wt.% polyols, 5-60 wt.% carbohydrates, 1-30 wt.% hydrocolloids, and 0-10 wt.% other ingredients. The hydrocolloids comprises gum arabic, modified rubber, gum ghatti and/or modified gum ghatti. Independent claims are also included for: (1) preparing the emulsion comprising mixing and dispersing the above mentioned components; (2) a beverage obtainable by mixing 0.01-5 g/l of the emulsion with water and optionally other ingredients; and (3) producing the beverage comprising mixing 0.01-5 g/l an emulsion and other ingredients.
