The present invention relates to a manufacturing method of an aronia jam having less bitter taste and a manufactured aronia jam. The method comprises a step of making a mixture by mixing 30-50 wt% of aronia, 40-60 wt% of sugar, 0.1-0.9 wt% of cyclodextrin, 0.1-3.0 wt% of citric acid, 0.05-3.0 wt% of vitamin and 0.1-4.0 wt% of pectin.본 발명은 떫은 맛이 감소된 아로니아 잼의 제조방법 및 이에 따라 제조된 아로니아 잼에 관한 것이다.
