PURPOSE:To provide an almond N-glycosidase gene useful for the sugar chain industries e.g. for the analysis of the structure and function of sugar chain and sugar protein and the production of almond N-glycosidase. CONSTITUTION:This almond N-glycosidase gene codes for, e.g. the amino acid sequence of formula. It can be produced by preparing a synthetic DNA having a proper length by the analysis of the partial amino acid sequences of the light chain and the heavy chain of almond N-glycosidase and screening a cDNA library prepared from a cDNA synthesized from an RNA extracted from almond seed with the prepared synthetic DNA.
