PROBLEM TO BE SOLVED: To provide an oil/fat modified starch that is excellent in dispersibility into food raw material such as butter and the like, is excellent in property of binding to seeds and the like, and can provide a good eat-texture.SOLUTION: The oil/fat modified starch of the present invention can be obtained by adding and mixing an oil/fat composition having iodine value of 125 to 170 and containing polyphenol by 35 ppm to 8000 ppm to a starch, and subjecting to aging treatment.
