PROBLEM TO BE SOLVED: To provide a method for reducing the peculiar unpleasant odor (fermentation odor) and unpleasant taste (strong acidity) of composite fermented milk and to provide the composite fermented milk the taste quality and flavor of which are made excellent by the method.SOLUTION: Rare sugar-containing syrup is incorporated in a raw material of the composite fermented milk by 1-30 mass% of the solid content of the raw material so that the peculiar unpleasant odor (fermentation odor) and unpleasant taste (strong acidity) of the composite fermented milk are reduced and moreover the composite fermented milk has imparted full-bodied taste or natural sweetness and an excellent total balance between the flavor and taste quality thereof.COPYRIGHT: (C)2014,JPO&INPIT【課題】 複合発酵乳の有する独特の不快臭(発酵臭)及び不快味(強い酸味)を低減する方法、及び該方法により味質と風味に優れた複合発酵乳を提供すること。【解決手段】 複合発酵乳の原料中に希少糖含有シロップを固形分で1~30質量%含有させることにより、複合発酵乳にみられる独特の不快臭(発酵臭)や不快味(強い酸味)が低減されだけでなく、コク味や自然な甘味が付与された、風味と味質のトータルバランスに優れた複合発酵乳を提供することができる。【選択図】なし
