PROBLEM TO BE SOLVED: To provide a freshness retaining agent and a freshness retaining method for a plant having excellent safety in the human body upon eating and also capable of retaining a freshness retaining effect for a plant over a long period of time.SOLUTION: There is provided a freshness retaining agent for a plant, which includes calcium oxide and magnesium hydroxide, and in which the weight of the magnesium hydroxide to the calcium oxide is ≥8%.
