The present invention relates to a method for preparing fermented coffee with enhanced quality while improving the aroma and reducing the caffeine content through a coffee bean fermentation process. The method includes: a bulk fermentation liquid preparing step for cultivating lactic acid bacteria at the level of 1.09 cfu/ml or more； fermenting the coffee beans with sufficient water to have a pH of 5.2 or less； a roasting step of drying the fermented coffee beans to have the water content of 10 wt% or less； and an extracting step of extracting water by extracting effective ingredients from the coffee beans ground in a predetermined size. The present invention can execute the fermenting process quickly and easily to lower the cost and improve the industrial usability by significantly reducing the fermentation time while maintaining uniform quality easily. The present invention can execute the hydration, expansion, and fermenting processes in an integrated manner to significantly reduce the fermentation time while easily and cheaply mass-producing the standardized products by using the bulk fermentation liquids.본 발명은 커피원두의 발효공정을 통하여 카페인이 저감되고 향미가 풍부하게 증진되면서 품질이 향상된 발효커피를 제조하는데 있어서, 유산균수 1.09cfu/ml 이상 수준으로 배양하여 구성하는 벌크발효액 제조단계와, 벌크발효액을 커피생두에 일정비율로 혼합하는 벌크발효액 혼합단계와, 커피생두가 충분히 수화되면서 pH5.2이하로 발효되는 생두발효단계와, 발효생두를 함수량 10중량%(w/w%)이하로 건조하여 로스팅하는 로스팅 단계와, 일정 크기로 커피원두를 분쇄하여 가용성분을 물 추출하는 추출단계를 포함하여 구성하는 것을 특징으로 하는 신속 발효커피 제조방법에 관한 것이다. 본 발명은 발효공정을 빠르고 용이하게 실행하여 비용절감과 산업이용성을 높일 수 있도록 발효소요시간을 현격하게 단축시킬 수 있고, 또한 균일한 품질을 용이하게 유지할 수 있는 신속 발효커피 제조방법 및 발효커피 제품을 제공하여줄 수 있다. 또한, 본 발명은 수화 팽윤 및 발효공정을 통합하여 진행함으로써 발효시간을 현격하게 단축시켜줄 수 있으며, 벌크발효액의 사용을 통해 표준화된 제품을 용이하고 저비용으로 대량생산할 수 있는 효과가 있다.
