PROBLEM TO BE SOLVED: To provide an agent that comprises a naturally occurring substance having high safety as an active ingredient and effectually and effectively suppresses fading and/or change in color of fish meat, and to provide a method for suppressing fading and/or change in color of fish meat.SOLUTION: The agent comprising ferulic acid being an antioxidant component present in plant seed the cell walls of plant seeds such as rice, wheat, or the like, and vitamin C at a prescribed ratio and in a prescribed amount of a pH adjustor is used to effectively suppress fading and/or change in color of fish meat in which especially an oxidation reaction is involved (browning of myoglobin, fading and change in color of carotenoid pigment, oil staining, etc.).
