PURPOSE: A producing method of salicornia herbacea powder having improved hygienic property and digestibility is provided to enable users to simply intake nutrients from salicornia herbacea. CONSTITUTION: A producing method of salicornia herbacea powder comprises the following steps: washing and juicing salicornia herbacea, and sterilizing the obtained salicornia herbacea juice at 90-110 deg C for 5-60 minutes； concentrating the salicornia herbacea juice at 50-70 deg C, and spray-drying the salicornia herbacea juice to obtain salicornia herbacea juice powder； enzyme-decomposing juicing residues of the salicornia herbacea using cellulase or hemicellulase at 40-55 deg C for 30 minutes-2 hours； deactivating the enzymes, and drying and crushing the juicing residues to obtain salicornia herbacea residue powder； and mixing the salicornia herbacea juice powder and the salicornia herbacea residue powder.본 발명의 함초분말의 제조방법은 종래 함초 자체를 그대로 건조한 함초분말이 높은 염농도로 인하여 건조과정 중 흡습이 일어나 건조가 어렵고, 분말 제조 후에도 흡습을 통해 미생물이 증식하기 좋은 조건이 되어 변질되는 문제점과, 또한 종래 함초 착즙액 또는 추출액 분말이 함초 자체의 영양구성의 대부분을 차지하는 식이섬유가 모두 제거되는 문제점을 해결한 것으로, 본 발명의 함초분말은 위생성과 소화능을 향상시키면서, 함초가 가지는 모든 부위를 영양소의 손실없이 그대로 간편하게 섭취할 수 있게 한다.
