PURPOSE: A bubble generator for instant food is provided to give boiling effects in visual, auditory and tactile ways right after pouring hot water into a container or after certain time is passed. CONSTITUTION: A foaming part (11) comprises foaming material which generates bubbles when touching with water. An external skin part (12) coats whole or a part of a foaming part surface or embeds the foaming part. A foaming material generates one of O2, CO2 and N2 bubbles when touching with water. The foaming material comprises one or more potassium hydrogen carbonate or sodium hydrogen carbonate. The foaming material additionally includes citric acid. A weight ratio of potassium hydrogen carbonate, sodium hydrogen carbonate and a mixture thereof to citric acid is 1:0.8-1.2. A soluble material comprises one or more of gelatin, sugar, and starch.즉석식품 용기에 뜨거운 물을 부었을 때 끓는 느낌을 부여하기 위한 즉석식품용 기포 발생제 및 이를 이용한 즉석식품이 개시된다. 즉석식품용 기포 발생제는 물과 접촉시 기포를 발생시키는 발포물질을 구비한 발포부와, 발포부 표면의 전체 또는 일부를 수용성물질로 코팅하거나 발포부를 내장하는 외피부로 이루어진다. 이로부터 뜨거운 물을 부은 후 일정시간 경과 후 또는 즉시 기포를 발생시킴으로써 물이 끓는 것과 같은 시각, 청각 및 촉각의 효과를 부여하여 실제 식품의 조리와 같은 느낌을 얻을 수 있다. 또한 기포 발생 시점과 지속 시간을 해당 즉석식품의 조리시간을 고려하여 조절함으로써 조리 완료시점을 시계를 보지 않더라도 알 수 있다.
