A process for the manufacture of food products which comprises the steps of:providing a mould (1) defining a mould cavity,introducing a certain quantity of moulding material (3) in a fluid state into the cavity (1)introducing into the mould cavity (1) a plug (4) the outer surface of which defines with the surface of the said mould cavity a space to be filled by the moulding material (3). A plug of edible material such as wafer, for example, is used as the plug (4).
