The present invention relates to a medium composition for manufacturing pine vinegar using mineral water, a manufacturing method of pine vinegar manufactured by ethanol fermentation and acetic acid fermentation using the medium composition, pine vinegar manufactured using the method, and beverage comprising the same. According to the present invention, efficiency of ethanol fermentation and acetic acid fermentation can be increased by comprising mineral water in a medium composition for manufacturing pine vinegar. In addition, pine vinegar manufactured using the medium composition and beverage comprising the same have a high value as a product with excellent sensory properties and functionality.본 발명은 광천수를 이용한 솔식초 제조용 배지 조성물, 상기 배지 조성물을 이용하여 에탄올 발효 및 초산 발효하여 제조되는 솔식초의 제조 방법, 상기 방법을 사용하여 제조되는 솔식초 및 이를 포함하는 음료에 관한 것이다. 본 발명에 따르면, 솔식초 제조용 배지 조성물에 건조 솔잎, 건조 솔가지 및 광천수를 포함함으로써 알코올 발효와 초산 발효의 효율을 증대시킬 수 있고, 상기 배지를 이용하여 제조되는 솔식초 및 이를 포함하는 음료는 관능성과 기능성이 우수하여 상품으로서의 가치가 매우 높다.
