PURPOSE: A method of manufacturing red pepper paste is provided to manufacture red pepper paste containing unique components of dried croakers and to have a medicinal effect of Houttuynia cordata, Saururus chinensis, etc. by using dried croakers, plum flesh, and a fermented mixture of Houttuynia cordata and Saururus chinensis. CONSTITUTION: Plum flesh is manufactured by processing plums. A fermented mixture is manufactured by processing after mixing Houttuynia cordata and Saururus chinensis. Dried croaker powder is manufactured by processing dried croakers. 3-10 wt% of fermented soybean powder, 3-10 wt% of glutinous rice, 2-5 wt% of plum flesh, 10-25 wt% of red pepper powder, 20-30 wt% of alcohol, 15-25 wt% of starch syrup, 3-6wt% of the fermented mixture of Houttuynia cordata and Saururus chinensis, 3-9 wt% of dried croaker powder, and 3-5 wt% of garlic are mixed to manufacture a composition of red pepper paste. The composition of red pepper paste is aged. The dried croaker powder is manufactures as follows: After the head and internal organs of the dried croaker are removed, the dried croaker is pulverized with a pulverizing device. Proteinase and water are mixed to manufacture a lyase solution. The lyase solution is mixed with the pulverized dried croaker. The mixed dried croaker is filtered. The filtered dried croaker is dried.
