PROBLEM TO BE SOLVED: To provide a sterilizing method by which a higher hygienic state of a food processing apparatus can be maintained by suppressing the fall of an effective component concentration under an organic substance present condition, and by applying a sterilizing liquid by which a high sterilizing effect can be kept for a long period of time.
SOLUTION: The sterilizing liquid having a pH buffer capacity contains (A) 50 to 600 ppm of a hypochlorous acid and/or its salt, (B) 50 to 2,000 ppm of an isocyanuric acid and/or its salt, and water, and pH of which is 5 to 7, and the effective chlorine concentration of which is 50 to 500 ppm. The sterilizing liquid is applied to the food contact section of the food processing apparatus to sterilize the food processing apparatus.
