A food ingredient that contains a gel or foam plastic material, is rich in protein, has low antioxidant properties, is low in fat, does not contain lactose and caffeine, and is easy to chew, including a neutral egg hydrolysate. These ingredients are proposed as substitutes for milk based sweet and salty dishes because they have similar taste, appearance and texture characteristics, but there are also new foods,which are especially indicated for consumption by people with dairy intolerance and obesity problems. Claim 1: Healthy food composition with gel or foam texture, free of lactose and casein, comprising a hydrolyzate of neutral-tasting egg proteins obtainable by a process comprising the following steps: a) acidification of the pH of an egg product with a concentrated food grade acid to a pH between 5.0 and 7.0, b) addition of an aminopeptidase in an amount of between 1 and 3 g per liter of egg product, c) incubation at a temperature between 45 and 55 ° C, over a period of 30 to 180 minutes,and d) inactivation of the aminopeptidase at a temperature between 85 and 95 ° C and for a period of 10 to 15 minutes.
