PROBLEM TO BE SOLVED: To provide food compositions comprising tailored oils.SOLUTION: Methods and compositions for the production of food compositions, oils, fuels, oleochemicals, and other compounds in recombinant microorganisms are provided, including oil-bearing microorganisms and methods of low cost cultivation of such microorganisms. Microalgal cells contains exogenous genes that encode, for example, a lipase, a sucrose transporter, a sucrose invertase, a fructokinase, a polysaccharide-degrading enzyme, a keto acyl-ACP synthase enzyme, a fatty acyl-ACP thioesterase, a fatty acyl-CoA/aldehyde reductase, a fatty acyl-CoA reductase, a fatty aldehyde reductase, a fatty aldehyde decarboxylase, and/or an acyl carrier protein, wherein the microalgal cells are useful in manufacturing food compositions, and transportation fuels such as renewable diesel, biodiesel, and renewable jet fuel, as well as oleochemicals such as functional fluids, surfactants, soaps and lubricants.【課題】用途に応じた油を含む食品成分の提供。【解決手段】油産生微生物及びかかる微生物の低コスト栽培方法を含む、組換え微生物における食品組成物、油、燃料、油脂化学品、及び他の化合物の産生方法及び組成物が提供する。例えば、リパーゼ、ショ糖トランスポーター、ショ糖インベルターゼ、フルクトキナーゼ、多糖分解酵素、ケトアシル－ＡＣＰ合成酵素、脂肪族アシル－ＡＣＰチオエステラーゼ、脂肪酸アシル－ＣｏＡ／アルデヒド還元酵素、脂肪酸アシル－ＣｏＡ還元酵素、脂肪族アルデヒド還元酵素、脂肪族アルデヒド脱炭酸酵素、及び／又はアシルキャリアータンパク質などをコードする外来遺伝子を含む微細藻類細胞は、食品組成物、並びに再生可能なディーゼル、バイオディーゼル及び再生可能なジェット燃料などの輸送燃料、並びに機能液、界面活性剤、石鹸及び潤滑剤などの油脂化学品を製造するのに有用である。【選択図】図１
