PURPOSE: An extraction method of jujube leaves, jujube leaf extract produced therefrom, and food composition including thereof are provided to effectively obtain antioxidants from the jujube leaves. CONSTITUTION: An extraction method of jujube leaves comprises a step of extracting the jujube leaves at 35-50 deg C for 10-40 minutes using 20-60% ethanol. The jujube leaf extract obtained from the extraction method contains 170-180mg/g of polyphenol, and 30-50mg/g of flavonoid. The jujube leaf extract has the electron-donating ability of 80-90%.본 발명은 대추잎의 추출방법으로서, 35~50℃에서 10~40분간 20~60% 에탄올로 용매추출하는 것을 특징으로 하는 대추잎의 추출방법, 이에 의해 제조된 대추잎 추출물 및 이러한 대추잎 추출물을 함유하는 식품조성물에 관한 것으로, 본 발명에 의하면 항산화 물질 용매추출조건이 최적화된 대추잎 추출방법을 제공할 수 있다.
