PROBLEM TO BE SOLVED: To provide a method for producing beverages containing dietary fibers in a high concentration, using plant bodies such as vegetables and fruits as beverage raw materials, and a method for increasing the amount of the dietary fibers in squeezed liquid obtained from the plant bodies.
SOLUTION: This method for producing the beverages using a supernatant obtained from the squeezed liquid of the plant bodies comprises a heating process of heating the plant bodies so that the material temperature of the plant bodies becomes &ge85°C and a process of squeezing the plant bodies heated in the heating process. Further, the method may include a separation process of obtaining the supernatant by the solid-liquid separation of the plant body-squeezed liquid obtained by the squeezing process.
