The present invention discloses a vegetarian fried food with a pickled core structure. The vegetarian fried food has mainly a matrix made of vegetarian raw materials. A hollow core is formed inside the matrix. After the base is cooled by frying or baking, and a vegetarian pickle is placed in the hollow core to form a substrate with a wrapped pickled core structure. The base is coated with a layer of vegetarian edible crispy film to become a vegetarian fried fat with a pickled core structure wherein the vegetarian pickle is refrigerated after being prepared, it can maintain its coldness and freshness, increase the unique pickled flavor of vegetarian fried foods, and reduce the greasy feeling of fried broilers to increase appetite the vegetarian edible crispy film not only has vegetarian fried foods.
