PROBLEM TO BE SOLVED: To provide a production method for efficiently acquiring amino acids or foods containing amino acids from a mushroom culturing medium.SOLUTION: The amino acid producing method comprises culture of mushroom mycelium in a medium containing a protein material, inoculation of lactic acid bacteria and fermentation to form the amino acids, wherein the protein material is one or more materials selected from brown rice, soybean, barley, buckwheat, rice bran, bean curd refuse, foxtail millet, millet, sesame and seed, and the mycelium is mycelium of one or more kinds of mushrooms belonging to genus Flammulina, genus Hypsizygus, genus Pleurotus, genus Hericium, genus Grifola, genus Lentinula, genus Agaricus, genus Pholiota, genus Phellinus or genus Sparassis.COPYRIGHT: (C)2013,JPO&INPIT【課題】きのこを栽培する培地からアミノ酸あるいはアミノ酸を含有する食品を効率的に入手するための製造方法を提供する。【解決手段】タンパク質素材を含有する培地できのこ菌糸を培養した後、乳酸菌を接種して発酵させ、アミノ酸を生成するアミノ酸の製造方法であり、タンパク質素材が、玄米、大豆、麦、蕎麦、米糠、おから、粟、きび、胡麻、及び、種子からなる群から選ばれる1又は2種以上であること、きのこ菌糸が、エノキタケ(Flammulina)属、シロタモギタケ(Hypsizygus)属、ヒラタケ(Pleurotus)属、サンゴハリタケ(Hericium)属、マイタケ(Grifola)属、シイタケ(Lentinula)属、ハラタケ(Agaricus)属、スギタケ(Pholiota)属、キコブタケ(Phellinus)属、及び、ハナビラタケ(Sparassis)属に属する一種又は二種以上のきのこの菌糸である。【選択図】図1
