The present invention provides a novel pure substance extracting method. Differing from conventional pure substance method utilizing chromatography way to treat a red mold product with an extracting process by using a plurality of organic extracting solution, the present invention merely utilizes water and ethanol solution to extract the pure substances of Monascin and Ankaflavin from the red mold product. Based on experimental results, the precipitate of the substances obtained through this novel extracting method is able to contain high extraction percentage of Monascin (~97.35%) and Ankaflavin (~95.16%). Therefore, it is able to know that the novel pure substance extracting method includes the advantages of high extraction speed, high extraction efficiency, high extraction percentage, and using single organic solution.本發明係提供一種新穎純物質萃取方法。取代習知的純物質萃取方法所慣用之有機萃取液以及管柱層析，本發明之方法僅僅使用酒水溶液自一紅麴發酵產品之中萃取出含有Monascin及Ankaflavin的沉澱物；此外，經由本發明之方法所獲得之純物質的沉澱物，其不需要經過減壓濃縮程序便自然地含有萃取回收率高達97.35%之Monascin以及萃取回收率高達95.16%之Ankaflavin。因此，可以證實本發明之新穎純物質萃取方法具備了萃取速度快、高效率、以及減少使用有機溶劑等優點。
