PROBLEM TO BE SOLVED: To provide a liquid flavoring for smothering, eliminating bad smell specific for food materials and causing no scorching of the bottom of a cooking pan.SOLUTION: Good taste smothered dishes are provided by using a liquid flavoring for smothering added with granular vegetables, which liquid flavoring gives a clear liquid flavoring having the viscosity of 55-575 mPa s by filtered with a sieve having 1,000 &mum aperture, wherein the content of unpassing granular vegetables is 5.0-25.0% (w/w), and the viscosity of the whole liquid flavoring is &le1,600 mPa s.COPYRIGHT: (C)2011,JPO&INPIT【課題】食材特有の嫌な風味を消去すると共に、調理鍋の底部が焦げ付かない蒸し焼き料理用調味液を提供する。【解決手段】粒状野菜入り調味液であって、該調味液を目開き1000μmの篩にかけ得られる透過調味液の粘度が55~575mPa・sであり、且つ非透過粒状野菜の含量が5.0~25.0%(w/w)であり、且つ調味液全体の粘度が1600mPa・s以下であることを特徴とする蒸し焼き料理用調味液を用いて、風味の良好な蒸し焼き料理を得る。【選択図】図1
