PURPOSE: A germination method of soybean seeds is provided to manufacture germinated soybeans having the increased content of GABA and a high concentration of calcium and iron. CONSTITUTION: Chitosan with a low molecular weight is dissolved in a glutamic acid solution. The chitosan solution is used as supply water in germination of soybeans. The soybeans are dipped in the distilled water at 25 deg. C for 4 hours. The dipped soybeans are strained and germinated at 25 deg. C for 24-72 hours. The distilled water is replaced with a calcium dissolved solution so that calcium is absorbed in the root of the germinated soybeans. The distilled water is replaced with an iron dissolved solution so that iron is absorbed in the root of the germinated soybeans at pH 6. Calcium is CaCl2. The concentration of CaCl2 is 1,500mg/L.
